Palak Vadi
Ingredients: can serve 5-6 people. usually 25-30 medium sized pieces can be cut
Oil - for cooking as well as greasing the plate
Ginger (small piece)
Garlic (5-6 pieces)
Green chilli (2-3 if chilies are non spicy if too spicy then 1-2 are enough)
spinach washed, cleaned & chopped (1 judi)
1 spoon lemon juice
2 spoons sugar
1 small spoon salt
2 glass water
3 big spoons gram flour
2 big spoons rice flour
few sesame seeds

Initial preparation
Grease the plate with oil first and keep it aside. wash and clean the spinach and chop it and keep it aside. make ginger garlice and green chilli paste. you can increase or reduce the number of chilies as per the spiciness you prefer.
Main preparation over flame
Add 5-6 tbsp. oil in an utensil. add the prepared paste to it. add chopped spinach and mix it well. cover it with lid for 1 minute. Spinach gets cooked very fast. Now add 1 spoon lemon juice and 2 spoons sugar to it. stir it. now add gram flour and keep stirring to avoid lump formation. Also add rice flour and keep stirring to avoid lumps. To know how to keep adding flour, you can see the video below which would give you a better idea about it. then pour the entire mixture on the greased plate and flatten it evenly with hand. sprinkle some sesame seeds over it (it adds flavour to the vadi). Cut the mixture as per the shape you prefer (kite or square) and shallow fry them over a pan. Your side dish is ready instantly.
