Khandeshi Style Shev Bhaaji

The area from the northwestern region of Maharasthra is generally called as Khandesh and the people their are known as khandeshi. These people love spicy food and shev bhaji is a famous dish in this region. So if you are ought to go in Dhule, Nagpur or northern parts of Maharashtra, then don't miss to have this cuisine for your lunch or breakfast. But if you have no plans to visit that area sooner, then you can give a try to prepare this unique dish on your own at home and we will help you do so. 


Ingredients : (serves 6-7 people)

Jeera
1 dry coconut
5-6 onions
Mustard
Asafoetida
Turmeric
Sugar
red chilli powder
Ginger-garlic paste
2 chopped tomatoes
1 tbsp. garam masala
4-5 bowls water
Tikhat Shev
Corriander
Salt to taste

How to make blend for the gravy

add jeera to 1 tbsp. oil heated in a pan and toss large slices of onions till it becomes brown. Then add grated dry coconut and toss it till it becomes brown. switch off the flame once the mixture starts leaving oil. then let the mixture cool down and later grind it in a mixer. add enough water to make a smoothly blend.

Make the Gravy

add 2 tbsp. oil in a pan and add mustard, asafoetida, turmeric, sugar and red chilli powder. Then add ginger garlic paste and the blended mixture. mix it well and add chopped tomatoes to it. then add 1 tbsp. garam masala and salt as per taste. Add 3 to 4 bowls water as per the need. then let the gravy get boiled for 2-3 mins. Switch off the flame once the gravy is boiled.

How to serve?

add gravy in the bowl. add spicy shev to it and top it up with finely chopped onion and garnish it with corriander. and serve it with hot chapatis or fulka. You can even punch lemon juice to it, if you like so to enhance its flavour.
