Baingan Fry / Fish style Brinjal vegetable
Brinjal is a vegetable which many people love. There are variety of brinjals and hence it can be cooked in different styles as well. I am using a big single brinjal of which we generally do bharata, but I would be showing you a different style of making a vegetable out of this brinjal which would look like a fishy fry and hence the name baingan fry. So now we move on to the recipe.
Groundnut powder
Red chilli powder
Asafoetida (hing)
Turmeric (haldi)
Salt (namak)
Cut the brinjal into 4 pieces. poke them with the help of a knife. and soak them in a water wherein salt is added. The salted water is absorbed in the brinjal through the pores. Then prepare a mixture with groundnut powder, Red chilli powder, Asafoetida (hing), Turmeric (haldi) & Salt (namak). mix it well. remove the brinjal's from the water and apply the mixture on them. since brinjal is wet mixture stucks to it firmly. Then put the brinjal pieces on a pan and pour oil around it. cover it with lid. Let the brinjal get cooked on a low flame. re-arrange the positio of the brinjal and let it cook again for a while. It will take 10-15 mins to cook the vegetable. you can poke a knife into a brinjal and if it pierces well then you can assume it cooked. Once the brinjal's are cooked, keep the brinjals aside on a pan and put the rest of the mixture in the pan. add some oil and cook the mixture for 1-2 mins and turn off the flame. Your brinjal fry is ready to be serve with roti or bhakri.
